In a medium saucepan, bring 2 cups of water to a boil. Once boiling, remove from heat and add the green tea bags. Steep for 3-5 minutes, depending on your desired strength.
Remove the tea bags and let the tea cool to room temperature.
In a large pitcher, combine the cooled green tea, pineapple juice, coconut water, honey (if using), and lime juice. Stir well to combine.
Refrigerate the mixture for at least 1 hour to chill.
To serve, fill glasses with ice cubes and pour the tropical iced green tea over the ice. Garnish with fresh mint leaves.
