In a large mixing bowl, combine the diced pineapple, strawberries, mango, kiwi, grapes, and mini marshmallows.
In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and lime juice until well combined.
Pour the sweetened condensed milk mixture over the fruit and gently toss until all the fruit is coated.
If using, sprinkle the shredded coconut over the top and give it a light stir.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
