Roasting and Assembly Steps

  2. Toast the bread slices in a toaster or on a skillet until golden brown.
  3. Spread a generous layer of whipped almond cheese on the bottom slice of each piece of toasted bread.
  4. Layer fresh arugula, roasted carrots, and pistachios evenly on the sandwich.
  5. Sprinkle fresh lemon zest over the filling and cap with the second slice of bread. Press down gently.
  6. Slice in half and serve warm or at room temperature.
