Roasting and Assembly Steps
- Preheat your oven to 200°C (390°F). Toss sliced carrots with harissa paste, olive oil, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes, turning halfway through.
- Toast the bread slices in a toaster or on a skillet until golden brown.
- Spread a generous layer of whipped almond cheese on the bottom slice of each piece of toasted bread.
- Layer fresh arugula, roasted carrots, and pistachios evenly on the sandwich.
- Sprinkle fresh lemon zest over the filling and cap with the second slice of bread. Press down gently.
