  • 2 cups Broccoli chopped into bite-sized pieces
  • 1 medium Brown Onion diced
  • 3 cloves Garlic minced
For the Sauce
  • 4 ounces Bacon diced
  • 1 teaspoon Dried Thyme or adjust if using fresh
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Gochujang Paste adjust for spice
  • 1 cup Heavy Cream or substitute with soy cream
  • 1 teaspoon Black Pepper freshly ground

Method
 

Step-by-Step Instructions
  1. Boil the water in a large pot and add salt.
  2. Dice the onion, mince the garlic, and chop the broccoli.
  3. Cook the orecchiette for 3 minutes less than package instructions, then add broccoli for an additional 3 minutes. Drain.
  4. Cook the diced bacon in a large skillet until crispy, about 5-6 minutes, then add onions and garlic, cooking for an additional 2 minutes.
  5. Stir in thyme, tomato paste, and gochujang, then add heavy cream and let simmer.
  6. Combine the drained pasta and broccoli with the sauce; add reserved pasta water if needed.
  7. Adjust seasoning with salt and pepper, then serve with garnishes.
