Creating the Dough
- In a large mixing bowl, cream together the butter and peanut butter until smooth and fluffy. Gradually mix in the brown sugar and granulated sugar until well combined.
- Add the egg and vanilla extract, mixing on low speed until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Gently fold in the chocolate chips, ensuring they are evenly distributed in the dough.
Baking the Cookies
- Drop tablespoon-sized amounts of dough onto lined baking sheets, spacing them about 2 inches apart.
- Preheat your oven to 375°F (190°C) and bake for 8-10 minutes for small cookies or 11-12 minutes for jumbo cookies until edges are lightly golden.
- Remove from the oven and let cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
