Ingredients
  

Filling
  • 1 cup Ricotta Cheese can substitute with cottage cheese
  • 2 cups Fresh Spinach can swap with kale or chard
  • 1/2 cup Parmesan Cheese or use Pecorino Romano
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Pepper
  • 1 large Egg can use flaxseed egg for vegan version
Coating
  • 1 cup Breadcrumbs use gluten-free for gluten-free option

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ricotta cheese, finely chopped fresh spinach, grated Parmesan cheese, garlic powder, salt, pepper, and the egg.
  3. Gradually incorporate breadcrumbs into the filling mixture until it reaches a sticky but moldable consistency.
  4. Shape the mixture into balls about 1-2 inches in diameter, rolling each in additional breadcrumbs.
  5. Place the prepared bites on the lined baking sheet, spaced apart, and lightly spray the tops with olive oil.
  6. Bake in the preheated oven for 15-20 minutes, turning halfway through, until they are crisp and golden.
  7. Let them cool slightly before serving warm with your favorite dipping sauce.
