Method
 

Step-by-Step Instructions for Smothered Chicken
  1. Begin by seasoning the chicken thighs with seasoning salt, garlic powder, paprika, Sazon, and black pepper. Let sit at room temperature for 15 minutes.
  2. Mix flour with a pinch of remaining spices in a bowl. Coat each chicken thigh thoroughly in the seasoned flour and set aside.
  3. Heat oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for 5 minutes until golden brown, then flip and sear for another 4 minutes. Remove from skillet.
  4. In the same skillet, reduce heat to medium, melt butter, and sauté onion and garlic for 3-4 minutes until translucent. Whisk in reserved seasoned flour for 3-5 minutes to create a roux.
  5. Gradually pour in chicken stock while whisking to prevent lumps. Stir in heavy cream and let simmer until thickened (3-4 minutes).
  6. Return chicken to skillet, nestle into gravy, cover with lid, and bake in a preheated oven at 400°F for 45 minutes until chicken reaches 165°F.
  7. Garnish with parsley and serve over mashed potatoes.
