Ingredients
  

For the Filling
  • 1 pound Ground Beef can substitute with ground turkey or chicken
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder adjust according to spice tolerance
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
For the Tortillas
  • 8 large Flour Tortillas or corn tortillas for gluten-free
For the Sauce & Toppings
  • 2 cups Enchilada Sauce homemade or store-bought
  • 1 cup Shredded Cheddar Cheese can substitute with Monterey Jack or vegan cheese
  • 1/2 cup Sour Cream can substitute with Greek yogurt
  • 1/4 cup Chopped Fresh Cilantro or parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and cook until browned.
  3. Add diced onion to the skillet and cook until translucent, then add minced garlic and cook until fragrant.
  4. Stir in ground cumin, chili powder, paprika, salt, and pepper, and cook until the spices are fragrant.
  5. Fill each flour tortilla with about 1/4 cup of the meat mixture, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until the cheese is bubbly.
  8. Let the enchiladas cool slightly before serving. Garnish with sour cream and chopped cilantro.
