- Preheat your oven to 400°F (200°C). Gather your ingredients and prepare your workspace.
- Pat the chicken thighs dry, season with salt, pepper, paprika, and garlic. Let them rest for 15-20 minutes.
- Peel and quarter potatoes, and slice the onion into rings.
- Heat olive oil in a skillet over medium-high heat, sear chicken thighs skin-side down for 5-7 minutes, flip and sear other side for 3-4 minutes, then remove.
- Add onion rings to the skillet, sauté for 2-3 minutes until softened, then add potatoes and sauté for another 5 minutes.
- Return chicken to the skillet, pour in chicken broth, squeeze lemon juice over chicken, sprinkle herbs, and transfer to oven.
- Roast for 35-40 minutes until chicken reaches 165°F (74°C).
- Let the dish rest for 5 minutes, serve hot, and enjoy!
