Ingredients

For the Casserole
  • 2 lbs Chicken Breasts Tender and juicy; rotisserie chicken can be used.
  • 4 cups Broccoli Florets Fresh broccoli holds its shape well during cooking.
  • 1 medium Onion Finely diced; shallots can be used for a milder taste.
  • 4 cloves Garlic Minced; fresh is best, but garlic powder can work.
  • 2 cups Cheddar Cheese Shredded; mozzarella can be used for a lighter flavor.
  • 2 tablespoons Olive Oil For sautéing vegetables; avocado oil works as well.
For the Seasoning
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste; white pepper can be used.
  • 1 tablespoon Italian Seasoning Adjust based on flavor preferences.

Equipment

  • Instant Pot

Method

Preparation Steps
  1. Start by gathering all your ingredients for the Savory Chicken and Broccoli Casserole. Chop the chicken breasts into bite-sized pieces and cut the broccoli into florets. Finely dice the onion and mince the garlic.
  2. Using your Instant Pot, select the sauté mode and add olive oil. Once the oil warms up, add the diced onion and minced garlic, stirring frequently for about 3-4 minutes until the onion becomes translucent.
  3. Toss in the chicken pieces along with salt, black pepper, and Italian seasoning. Cook for an additional 5-6 minutes until the chicken is no longer pink.
  4. Fold in the broccoli florets and sauté for another 2-3 minutes to slightly soften the broccoli while keeping its color.
  5. Sprinkle the cheddar cheese over the mixture, gently folding it in until it melts and binds the ingredients together.
  6. Seal the Instant Pot lid securely and set it to cook on high pressure for 5-7 minutes.
  7. After cooking, perform a quick release and stir the casserole gently before serving warm.
