Method
 

Step-by-Step Instructions
  1. Slice the lean flank steak into thin strips against the grain, about 1/4 inch thick.
  2. Heat a large skillet over medium-high heat and add a light spray of cooking spray.
  3. Sauté the sliced beef for 3-4 minutes in a single layer until browned and cooked through.
  4. Add bok choy, sliced red bell pepper, minced garlic, and grated ginger to the skillet. Stir-fry for 2-3 minutes.
  5. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water until smooth, then pour into skillet.
  6. Return cooked beef to skillet and stir until well coated in sauce; let simmer for another 2-3 minutes.
  7. Garnish with sliced green onions and sesame seeds before serving.
