- In a food processor, combine drained garbanzo beans, tahini, fresh lemon juice, minced garlic, cumin, and a pinch of salt. Blend until smooth, scraping down the sides as needed. Gradually drizzle in olive oil while processing until you reach a creamy consistency, about 1–2 minutes.
- Spread the prepared hummus evenly in the bottom of an 11x7 or 8x8-inch baking dish, smoothing the surface. Refrigerate the hummus layer for at least 15 minutes.
- In a mixing bowl, combine Greek yogurt with chopped parsley, dill (if using), and remaining minced garlic. Spread the yogurt mixture on top of the chilled hummus.
- Layer the diced English cucumber, diced grape tomatoes, olives, feta cheese, and chopped red onion evenly on top.
- Serve immediately with pita chips, fresh veggies, or flatbreads for dipping.
