  • 1 bell pepper (red or yellow) Zucchini can be used as an alternative.
  • 14 ounces coconut milk Full-fat recommended.
  • 1 tablespoon Jamaican jerk seasoning Adjust based on your heat preference.
  • 1 tablespoon fresh lime juice Adds brightness to the dish.
  • Salt and pepper Essential for seasoning.
For Garnish
  • ¼ cup fresh cilantro Chop for garnishing.
  • Lime wedges Serve on the side.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes. Stir in garlic and bell pepper, cooking for an additional 2-3 minutes.
  3. Increase heat to medium-high, add shrimp, season with salt, pepper, and jerk seasoning. Cook for 3-4 minutes until shrimp are pink and opaque.
  4. Pour in coconut milk and lime juice, and bring to a simmer for 3-5 minutes. Adjust thickness with reserved pasta water if needed.
  5. Add drained pasta to the skillet, toss to combine with sauce, adjust seasoning as needed, and serve hot garnished with cilantro and lime.
