- Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes. Stir in garlic and bell pepper, cooking for an additional 2-3 minutes.
- Increase heat to medium-high, add shrimp, season with salt, pepper, and jerk seasoning. Cook for 3-4 minutes until shrimp are pink and opaque.
- Pour in coconut milk and lime juice, and bring to a simmer for 3-5 minutes. Adjust thickness with reserved pasta water if needed.
- Add drained pasta to the skillet, toss to combine with sauce, adjust seasoning as needed, and serve hot garnished with cilantro and lime.
