Ingredients
  

For the Pasta
  • 2 cups Pasta Any small shape pasta works well, like fusilli or penne.
  • 1 tablespoon Salt For boiling the pasta.
For the Salad
  • 1 cup Cherry Tomatoes Halved.
  • 1 cucumber Cucumber Diced.
  • 1 cup Feta Cheese Crumbled.
  • 1 cup Kalamata Olives Pitted and halved.
  • 1 bunch Fresh Parsley Chopped.
For the Dressing
  • 1/4 cup Olive Oil Extra virgin for best flavor.
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Oregano Dried.
  • 1 clove Garlic Minced.
  • to taste Salt and Pepper

Method
 

Salad Preparation
  1. Boil water in a pot and add salt. Cook pasta according to package instructions until al dente.
  2. Drain pasta and rinse under cold water to stop cooking. Let cool.
  3. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, feta cheese, olives, and parsley.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
  5. Pour dressing over the salad and toss gently to combine.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
