Ingredients

For the Brownie Base
  • 10 dates Medjool Dates Flatten for easier layering
  • 1/2 cup Cocoa Powder Use unsweetened for the best taste
  • 1/4 cup Maple Syrup Can substitute with honey or agave syrup
  • 1/4 cup Runny Nut Butter (Almond Butter) Sunbutter serves as a great nut-free alternative
  • 1/2 cup Oat Flour Almond flour can replace it for a gluten-free version
  • 1/4 cup Almond Milk Any non-dairy milk works
  • 1 teaspoon Vanilla Extract Enhances the overall flavor
  • 2 tablespoons Coconut Oil Melted, helps with texture
  • 1/4 cup Chocolate Chips Semi-sweet or dark chocolate can be used
For the Raspberry Jam
  • 1 cup Frozen Raspberries Feel free to substitute with fresh raspberries
  • 2 tablespoons Chia Seeds Thickens the jam
  • 1/4 cup Water Hydrates chia seeds for a jam-like consistency
  • 2 teaspoons Arrowroot Powder Acts as a thickener; cornstarch works as an alternative

Equipment

  • Saucepan
  • Mixing Bowls
  • Silicone Molds
  • Parchment paper

Method

Make the Raspberry Jam
  1. In a small saucepan, combine frozen raspberries, water, chia seeds, and arrowroot powder. Cook over low heat while stirring frequently for about 5-7 minutes, or until the mixture thickens and becomes jam-like.
Prepare the Brownie Mixture
  1. In a large mixing bowl, combine cocoa powder, oat flour, maple syrup, almond butter, almond milk, vanilla extract, and melted coconut oil. Stir everything together vigorously for about 2-3 minutes until a thick and fudgy brownie dough forms.
Shape the Brownies
  1. Using your hands, take the brownie mixture and either press it into silicone molds or roll it into bite-sized balls. Aim for about 1/2-inch thickness for uniform bites.
Layer the Date Bites
  1. Flatten Medjool dates slightly. Spread each flattened date with a layer of the prepared brownie mixture, smoothing it out evenly.
Add Raspberry Jam and Finish Up
  1. Once the brownie layer is set on the dates, generously dollop the cooled raspberry jam onto each brownie layer. Sprinkle chocolate chips over the raspberry jam.
Freeze to Set
  1. Place the assembled Raspberry Brownie Date Bites in the freezer for about 30 minutes to firm up.
Store and Enjoy Your Treats
  1. Once frozen, transfer your Raspberry Brownie Date Bites to an airtight container. Store them in the fridge or in the freezer.
