Ingredients
  

  • 2 cups vanilla ice cream
  • 1 cup coconut milk
  • 1 cup fresh pineapple chunks or canned, drained
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon shredded coconut optional, for garnish
  • Maraschino cherries optional, for garnish

Method
 

  1. In a blender, combine the vanilla ice cream, coconut milk, pineapple chunks, and vanilla extract. Blend until smooth and creamy.
  2. If you prefer a thicker milkshake, add more ice cream; for a thinner consistency, add more coconut milk.
  3. Once blended, taste and adjust sweetness if necessary by adding a little sugar or honey.
  4. Pour the milkshake into tall glasses.
  5. If desired, sprinkle shredded coconut on top and add a maraschino cherry for garnish.
  6. Serve immediately with a straw or a spoon.
