Method
- In a blender, combine the vanilla ice cream, coconut milk, pineapple chunks, and vanilla extract. Blend until smooth and creamy.
- If you prefer a thicker milkshake, add more ice cream; for a thinner consistency, add more coconut milk.
- Once blended, taste and adjust sweetness if necessary by adding a little sugar or honey.
- Pour the milkshake into tall glasses.
- If desired, sprinkle shredded coconut on top and add a maraschino cherry for garnish.
- Serve immediately with a straw or a spoon.
