  • 2 boneless skinless chicken breasts (approximately 1 pound total)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon freshly squeezed lemon juice optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry using paper towels and place them in a shallow baking dish.
  3. In a separate bowl, combine the olive oil, garlic powder, onion powder, oregano, thyme, smoked paprika, salt, and pepper. Stir in lemon juice if desired.
  4. Generously coat both sides of the chicken breasts with the herb-infused mixture.
  5. Transfer the baking dish to the oven and bake for about 25 to 30 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Once baked, remove the chicken from the oven and let it rest for about 5 minutes before slicing.
