Step‑by‑Step Instructions for One Pot Irish Chicken
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine thyme, smoked paprika, garlic powder, and onion powder; rub this seasoning blend generously over the chicken pieces.
  3. Cook sliced bacon in medium heat in the cast iron pan until crispy, about 5–7 minutes.
  4. In the same pan, sauté diced onions in the leftover bacon fat for about 3–5 minutes until soft and translucent.
  5. Brown the seasoned chicken in the pan on medium-high for about 5 minutes on each side until golden and crisp.
  6. Layer the chopped potatoes and cabbage around the chicken, sprinkle crispy bacon on top and add salt and pepper.
  7. Roast in the oven for about 25–30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
