Soup Base
  • 6 cups Chicken Broth Opt for low-sodium broth
  • 2 cups Water Adjust for thickness
  • 1 pound Chicken Thighs Bone-in, skin-on recommended
Veggies
  • 1 medium Onion Chopped
  • 4 cloves Garlic Minced
  • 1 tablespoon Ginger Fresh, grated
  • 2-3 cups Optional Vegetables Celery, carrots, or mushrooms
Finish
  • 1 tablespoon Lemon Juice Add to taste
  • to taste Salt
  • to taste Pepper
  • to taste Red Pepper Flakes Optional
  • 1 tablespoon Sesame Oil For drizzling before serving
Optional Add-ins
  • 1 cup Rice Cook separately
  • 1 cup Quinoa Cook separately
  • 1 cup Pasta Cook separately

Method
 

Instructions
  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger for 3–5 minutes.
  2. Increase heat to medium-high and sear the chicken thighs skin-side down for 6–8 minutes.
  3. Pour in chicken broth and water, scrape bottom of the pot, and bring to a simmer. Cover and reduce heat for 20 minutes.
  4. Add optional vegetables in the last 10 minutes of simmering.
  5. Remove chicken, shred it, and return to the pot.
  6. Stir in lemon juice and adjust seasoning. Simmer for an additional 3 minutes.
  7. Serve hot, drizzled with sesame oil, and over your choice of rice, quinoa, or pasta.
