Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips semi-sweet or dark
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Method
 

  1. In a large mixing bowl, combine the rolled oats and salt.
  2. In a microwave-safe bowl, heat the peanut butter and honey (or maple syrup) together in the microwave for about 30 seconds, or until warm and easily mixable. Stir until smooth.
  3. Add the vanilla extract to the peanut butter mixture and mix well.
  4. Pour the peanut butter mixture over the oats and stir until all the oats are evenly coated.
  5. Fold in the chocolate chips until well distributed.
  6. Line a muffin tin with paper liners or lightly grease it. Spoon the mixture into each muffin cup, pressing down firmly to pack it in.
  7. Place the muffin tin in the refrigerator for at least 30 minutes to allow the cups to set.
  8. Once set, remove the cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the fridge.
