Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan lined with aluminum foil and sprayed with nonstick cooking spray.
  2. Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Gradually mix in creamy peanut butter, eggs, and vanilla extract until smooth.
  4. In another bowl, whisk together salt, baking soda, flour, and oats. Gradually add to the wet mixture.
  5. Fold in chocolate chips and M&M's.
  6. Press half of the cookie dough into the bottom of the baking pan and bake for 5 minutes.
  7. Beat cream cheese until smooth, then add sugar and melted chocolate, mixing until combined.
  8. Add the eggs one at a time, beating until smooth.
  9. Pour the cheesecake mixture over the crust, then crumble the remaining cookie dough on top.
  10. Bake for 30-35 minutes until golden brown and slightly jiggly in the center.
  11. Cool on a wire rack for at least 1 hour, then refrigerate for 4 hours or overnight before serving.
