Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper any color, sliced
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the sliced bell pepper and zucchini. Cook for another 4-5 minutes until the vegetables are tender.
  5. Add the cherry tomatoes, oregano, basil, paprika, salt, and pepper. Stir well and cook for an additional 2-3 minutes until the tomatoes soften.
  6. Remove from heat and garnish with fresh parsley before serving.
