Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 pieces of flatbread or pita bread

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the chicken mixture and toss to combine.
  4. Place the flatbread on a baking sheet. Spoon the chicken mixture evenly over each piece of flatbread.
  5. Bake in the preheated oven for 10-12 minutes, or until the flatbread is crispy and the edges are golden.
  6. Remove from the oven and let cool for a couple of minutes before slicing into pieces.
