Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method

  1. In a large bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes until well combined.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
  6. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Garnish with fresh parsley and serve with your favorite sides.
