- Begin by preparing your ingredients for the Lemon Chicken & Veggie Orzo Stir Fry.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering, around 2 minutes.
- Add diced chicken to the skillet and sear for 5-7 minutes until cooked through. Remove and set aside.
- In the same skillet, add a bit more oil if needed, then toss in minced garlic and bell peppers. Sauté for 2-3 minutes.
- Add sliced zucchini and continue to cook for another 2 minutes.
- Return cooked chicken to the skillet, followed by pre-cooked orzo. Stir everything together for about 2 minutes.
- Pour in 1 cup of chicken broth and the juice of one fresh lemon. Stir to combine.
- Simmer for 3-5 minutes, then remove from heat. Garnish with fresh herbs if desired.
