Ingredients
  

For the Stir Fry
  • 1 pound Chicken Breast diced into bite-sized pieces
  • 1 cup Orzo Pasta can substitute with cooked rice
  • 1 cup Bell Peppers any color
  • 1 medium Zucchini sliced into strips
  • 1 tablespoon Lemon Juice freshly squeezed
  • 2 cloves Garlic minced
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 cup Chicken Broth can use vegetable broth for vegetarian option
  • to taste Salt & Pepper adjust to taste

Method
 

Directions
  1. Begin by preparing your ingredients for the Lemon Chicken & Veggie Orzo Stir Fry.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering, around 2 minutes.
  3. Add diced chicken to the skillet and sear for 5-7 minutes until cooked through. Remove and set aside.
  4. In the same skillet, add a bit more oil if needed, then toss in minced garlic and bell peppers. Sauté for 2-3 minutes.
  5. Add sliced zucchini and continue to cook for another 2 minutes.
  6. Return cooked chicken to the skillet, followed by pre-cooked orzo. Stir everything together for about 2 minutes.
  7. Pour in 1 cup of chicken broth and the juice of one fresh lemon. Stir to combine.
  8. Simmer for 3-5 minutes, then remove from heat. Garnish with fresh herbs if desired.
