  • 3 pounds bone-in skin-on chicken thighs
  • 1/2 cup unsalted butter melted
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 tablespoon lemon zest
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, thyme, oregano, salt, black pepper, and red pepper flakes. Mix well.
  3. Place the chicken thighs in a large baking dish and pour the lemon butter mixture over them, ensuring they are well coated.
  4. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  5. For extra crispy skin, broil the chicken for an additional 2-3 minutes at the end of baking.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
