Ingredients
  

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, oregano, basil, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Using your hands, form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20 minutes, or until they are cooked through and golden brown.
  5. Remove the meatballs from the oven and spoon marinara sauce over each meatball. Sprinkle shredded mozzarella cheese on top.
  6. Return the meatballs to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Serve warm, garnished with extra parsley if desired.
