- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a mixing bowl, combine crushed Nilla wafers, melted butter, and granulated sugar until well-mixed. Spread this mixture evenly across the bottom of the baking pan, pressing down firmly to form a solid crust. Bake for 8–10 minutes, until golden and set, then remove from oven and let cool slightly.
- In a large mixing bowl, combine granulated sugar, brown sugar, and vanilla extract. Beat in two eggs until the mixture is smooth and creamy. Gradually mix in all-purpose flour, baking powder, and salt until combined; be careful not to overmix. Fold in vanilla chips gently.
- Pour the blondie batter over the cooled Nilla wafer crust, using a spatula to spread it evenly across the surface. Next, sprinkle chunks of Golden Oreos generously on top of the blondie layer.
- Place the assembled baking pan in the preheated oven and bake for 30–35 minutes. The edges should become golden brown, while the center remains slightly soft.
- Remove the pan from the oven and let the bars cool in the pan for about 15 minutes. After cooling, gently lift the bars out and transfer to a wire rack to cool completely. Melt additional vanilla chips in the microwave, then drizzle over the top.
- Once set, cut your Vanilla Bars into squares and serve.
