  • 75 g Unsalted Butter melted
  • 50 g Granulated Sugar
For the Blondie Layer
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 75 g Granulated Sugar
  • 75 g Brown Sugar
  • 150 g All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 100 g Vanilla Chips
For the Topping
  • 100 g Golden Oreos or similar cookie

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a mixing bowl, combine crushed Nilla wafers, melted butter, and granulated sugar until well-mixed. Spread this mixture evenly across the bottom of the baking pan, pressing down firmly to form a solid crust. Bake for 8–10 minutes, until golden and set, then remove from oven and let cool slightly.
  3. In a large mixing bowl, combine granulated sugar, brown sugar, and vanilla extract. Beat in two eggs until the mixture is smooth and creamy. Gradually mix in all-purpose flour, baking powder, and salt until combined; be careful not to overmix. Fold in vanilla chips gently.
  4. Pour the blondie batter over the cooled Nilla wafer crust, using a spatula to spread it evenly across the surface. Next, sprinkle chunks of Golden Oreos generously on top of the blondie layer.
  5. Place the assembled baking pan in the preheated oven and bake for 30–35 minutes. The edges should become golden brown, while the center remains slightly soft.
  6. Remove the pan from the oven and let the bars cool in the pan for about 15 minutes. After cooling, gently lift the bars out and transfer to a wire rack to cool completely. Melt additional vanilla chips in the microwave, then drizzle over the top.
  7. Once set, cut your Vanilla Bars into squares and serve.
