  • 200 g Feta Cheese
  • 1 head Garlic Top sliced off
Herbs and Seasonings
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
For the Finish
  • 1 whole Lemon Quartered
  • 1 tablespoon Honey
  • ¼ cup Fresh Basil Chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 390°F (200°C).
  2. Wash and cube the large baking potatoes into bite-sized pieces, placing them in a large baking dish.
  3. Drizzle 1 tablespoon of olive oil over the potatoes and toss with thyme, oregano, salt, and pepper.
  4. Create a nest in the center for the feta cheese and place the garlic head and lemon wedges around it.
  5. Roast in the oven for 45-55 minutes until golden brown.
  6. Squeeze out roasted garlic into a bowl and mash it into a paste.
  7. Combine the garlic paste with the potatoes and add lemon juice and chopped basil.
  8. Drizzle honey over the roasted potatoes before serving.
