- Crush Oreo cookies into fine crumbs, blend with melted butter, and press into an 8-inch springform pan. Chill for 20-30 minutes.
- Beat cream cheese and sugar until smooth. Whip the heavy cream until soft peaks form.
- Bloom gelatine in warm water for 5 minutes until thick.
- Stir bloomed gelatine into cream cheese mixture, then fold in whipped cream.
- Add coffee into the filling mixture and stir gently to combine.
- Pour filling over crust, smooth the top, cover, and refrigerate for at least 8 hours until firm.
- Remove from springform pan, slice, and serve drizzled with chocolate sauce or with chocolate shavings.
