  • 2.5 tsp Gelatine Unflavored powdered for best results.
  • 2-3 tbsp Coffee Brewed coffee or instant coffee.
  • 1 cup Sugar Adjust based on preference.
For the Crunchy Crust
  • 15 cookies Oreo Cookies Substitute with gluten-free cookies if needed.

Method
 

Step-by-Step Instructions
  1. Crush Oreo cookies into fine crumbs, blend with melted butter, and press into an 8-inch springform pan. Chill for 20-30 minutes.
  2. Beat cream cheese and sugar until smooth. Whip the heavy cream until soft peaks form.
  3. Bloom gelatine in warm water for 5 minutes until thick.
  4. Stir bloomed gelatine into cream cheese mixture, then fold in whipped cream.
  5. Add coffee into the filling mixture and stir gently to combine.
  6. Pour filling over crust, smooth the top, cover, and refrigerate for at least 8 hours until firm.
  7. Remove from springform pan, slice, and serve drizzled with chocolate sauce or with chocolate shavings.
