Preheat your Blackstone griddle or a large skillet over medium-high heat. Add the olive oil and let it heat for a minute.
In a large bowl, combine the minced garlic, salt, black pepper, paprika, and Italian seasoning. Add the chicken thighs and toss until they are evenly coated with the seasoning mixture.
Place the seasoned chicken thighs on the hot griddle or skillet. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
During the last few minutes of cooking, sprinkle the grated Parmesan cheese over the chicken. Cover with a lid or a large piece of aluminum foil to help the cheese melt.
Once the cheese is melted and bubbly, remove the chicken from the heat. Garnish with fresh parsley and serve with lemon wedges on the side.
