Method
 

Step-by-Step Instructions
  1. Blend together the softened butter, packed brown sugar, and 1 and 1/2 tablespoons of cinnamon until smooth to make the filling. Scoop out small portions and freeze for 20 minutes.
  2. Cream together 6 tablespoons of softened salted butter and 1 and 2/3 cup of granulated sugar until light and fluffy. Add in eggs one at a time and stir in vanilla extract.
  3. Whisk together 3 and 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 3/4 teaspoon of kosher salt, and 1 and 1/2 teaspoons of cream of tartar. Slowly add to the wet ingredients.
  4. Fold in the frozen cinnamon filling balls gently into the dough until evenly distributed.
  5. Preheat oven to 350°F (175°C). Use a cookie scoop to portion out dough and roll in a mix of 1/3 cup granulated sugar and 1 and 1/2 tablespoons of cinnamon.
  6. Bake in the preheated oven for 11-12 minutes, pull out while still soft to ensure chewiness.
  7. Allow cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack for complete cooling.
