- Blend together the softened butter, packed brown sugar, and 1 and 1/2 tablespoons of cinnamon until smooth to make the filling. Scoop out small portions and freeze for 20 minutes.
- Cream together 6 tablespoons of softened salted butter and 1 and 2/3 cup of granulated sugar until light and fluffy. Add in eggs one at a time and stir in vanilla extract.
- Whisk together 3 and 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 3/4 teaspoon of kosher salt, and 1 and 1/2 teaspoons of cream of tartar. Slowly add to the wet ingredients.
- Fold in the frozen cinnamon filling balls gently into the dough until evenly distributed.
- Preheat oven to 350°F (175°C). Use a cookie scoop to portion out dough and roll in a mix of 1/3 cup granulated sugar and 1 and 1/2 tablespoons of cinnamon.
- Bake in the preheated oven for 11-12 minutes, pull out while still soft to ensure chewiness.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack for complete cooling.
