Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a baking sheet lightly with non-stick spray.
  2. Arrange the flour tortillas on the prepared baking sheet and bake for 3–5 minutes, then flip and bake for an additional 2–5 minutes until golden and crispy.
  3. Heat a skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes until browned. Drain excess grease and set aside.
  4. Add taco seasoning and a splash of water to the cooked beef. Stir, bring to a boil, then reduce heat and simmer for 10 minutes until thickened.
  5. In a microwave-safe bowl, heat refried beans for about 1 minute and stir until smooth.
  6. Spread a layer of refried beans on one baked tortilla. Spoon the seasoned beef mixture on top, followed by another tortilla to assemble.
  7. Spread red enchilada sauce over the assembled pizza and sprinkle shredded cheeses on top. Add fresh toppings like diced Roma tomatoes, green onions, and olives.
  8. Bake the assembled pizza for about 5 minutes until cheese is melted and bubbly. Let cool slightly before slicing.
