Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine warm milk with sugar. Sprinkle active dry yeast on top and let it proof for about 5-10 minutes until frothy.
  2. Gradually mix in bread flour, salt, and egg yolks. Knead the mixture for 10-15 minutes until the dough is smooth and elastic.
  3. Add softened unsalted butter to the dough, kneading until fully incorporated for a silky texture.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour, or until it doubles in size.
  5. Peel and dice apples. In a skillet over medium heat, melt butter and add diced apples, brown sugar, and cinnamon. Sauté until tender.
  6. In a bowl, beat cream cheese until smooth. In another bowl, mix brown sugar, all-purpose flour, and cinnamon with softened butter until crumbly.
  7. Once the dough has risen, punch it down and divide into 10 equal pieces. Shape each piece into a ball and place on a parchment-lined baking sheet.
  8. Preheat oven to 375°F (190°C). Create an indent in each bun, add cream cheese filling, layer with sautéed apples, and sprinkle with crumble.
  9. Bake for 15-18 minutes, or until golden brown and puffed. Cool on a wire rack for 10 minutes before serving.
