Cooking Steps
  1. Preheat your oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add diced onion and minced garlic; sauté for about 5 minutes until the onion is translucent.
  3. Stir in 2 diced potatoes and 1 cup of sweet corn. Cook for another 5 minutes.
  4. Pour in 4 cups of vegetable broth, bring to a gentle boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  5. Add 1 cup of heavy cream, stirring well to combine and let thicken for about 5 minutes.
  6. Season with thyme, salt, and freshly ground black pepper to taste; simmer for another 5 minutes.
  7. Garnish with green onions, parsley, or cheese if desired, before serving.
