- Begin by washing the zucchinis and fresh herbs under cool water. Slice the zucchinis into ¼-inch thick rounds.
- In a large mixing bowl, whisk together olive oil, lemon juice, salt, and pepper. Add the zucchini and halloumi, tossing to coat. Marinate for 15–20 minutes.
- Preheat your grill over medium heat for about 5 minutes.
