For the Grilled Zucchini
  • 2 medium Zucchini Bell peppers or asparagus can also work.
For the Creamy Sauce
  • 1 cup Sour Cream or Greek Yogurt Plant-based alternatives can be used.
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 1 pinch Garlic Powder
  • to taste Salt & Pepper
For the Base
  • 2 cups Cooked Rice or Mashed Potatoes Customize your base according to cravings.

Method
 

Preparation Steps
  1. Pat the steak dry and season with garlic powder, onion powder, salt, and pepper. Rest for 15-20 minutes.
  2. Combine sour cream or Greek yogurt, Dijon mustard, fresh herbs, garlic powder, salt, and pepper. Whisk until smooth, and refrigerate for 15 minutes.
  3. Slice zucchini and toss with olive oil, salt, and pepper. Grill for 2-3 minutes on each side until charred.
  4. Grill the seasoned steak for 3-4 minutes per side until medium-rare. Let rest for 5-10 minutes.
  5. Slice the steak against the grain and assemble the bowl with rice or mashed potatoes, zucchini, steak, and creamy sauce.
