Step-by-Step Instructions for Greek Roasted Garlic Spinach White Pizza
- Preheat your oven to 400°F (200°C). Slice off the top of one medium head of garlic and drizzle it with olive oil. Wrap in aluminum foil and roast for 30–35 minutes until soft.
- While the garlic roasts, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add fresh spinach and sauté for about 2–3 minutes until wilted.
- Once the roasted garlic is cool, squeeze the cloves into a bowl and mash until smooth. Mix in ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper until creamy.
- Spread the roasted garlic-ricotta mixture over the pizza crust. Add sautéed spinach evenly, then sprinkle the remaining mozzarella and crumbled feta on top.
- Bake assembled pizza on a baking sheet for 15–20 minutes until the crust is golden brown and the cheese is bubbly.
- Allow the pizza to cool slightly for 5 minutes. Garnish with fresh basil leaves, slice into wedges, and serve.

Notes
This pizza is best enjoyed fresh from the oven. Let it cool for a few minutes before slicing to help it hold its shape.
