Step-by-Step Instructions for Greek Roasted Garlic Spinach White Pizza
  1. Preheat your oven to 400°F (200°C). Slice off the top of one medium head of garlic and drizzle it with olive oil. Wrap in aluminum foil and roast for 30–35 minutes until soft.
  2. While the garlic roasts, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add fresh spinach and sauté for about 2–3 minutes until wilted.
  3. Once the roasted garlic is cool, squeeze the cloves into a bowl and mash until smooth. Mix in ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper until creamy.
  4. Spread the roasted garlic-ricotta mixture over the pizza crust. Add sautéed spinach evenly, then sprinkle the remaining mozzarella and crumbled feta on top.
