  • 1 pound large shrimp peeled and deveined
  • 2 medium zucchinis sliced into half-moons
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the shrimp, zucchini, olive oil, minced garlic, salt, black pepper, and paprika. Toss until everything is well coated.
  3. Spread the shrimp and zucchini mixture in a single layer on a baking sheet lined with parchment paper.
  4. Sprinkle the grated Parmesan cheese evenly over the top.
  5. Roast in the preheated oven for 12-15 minutes, or until the shrimp are pink and cooked through and the zucchini is tender.
  6. Remove from the oven and garnish with fresh parsley. Serve with lemon wedges on the side.
