Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef, breaking it up as it cooks until browned, about 5–7 minutes. Season with salt and pepper, drain any excess fat.
  2. Push the cooked beef to one side of the skillet and add 4 cloves of minced garlic. Sauté for 1 minute until fragrant.
  3. Sprinkle 1 teaspoon of onion powder and 1 tablespoon of Cajun seasoning into the skillet. Stir for about 1 minute.
  4. Add 1 cup of uncooked long-grain white rice and 2 cups of beef broth. Stir to combine and bring to a gentle boil.
  5. Once boiling, reduce heat to low and cover. Let simmers for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat, fold in 1 cup of shredded cheddar cheese and ½ cup of grated parmesan cheese until melted into a creamy sauce.
  7. Adjust seasoning, serve immediately garnished with extra cheese or chopped parsley.
