- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef, breaking it up as it cooks until browned, about 5–7 minutes. Season with salt and pepper, drain any excess fat.
- Push the cooked beef to one side of the skillet and add 4 cloves of minced garlic. Sauté for 1 minute until fragrant.
- Sprinkle 1 teaspoon of onion powder and 1 tablespoon of Cajun seasoning into the skillet. Stir for about 1 minute.
- Add 1 cup of uncooked long-grain white rice and 2 cups of beef broth. Stir to combine and bring to a gentle boil.
- Once boiling, reduce heat to low and cover. Let simmers for 18-20 minutes until rice is tender and liquid is absorbed.
- Remove from heat, fold in 1 cup of shredded cheddar cheese and ½ cup of grated parmesan cheese until melted into a creamy sauce.
- Adjust seasoning, serve immediately garnished with extra cheese or chopped parsley.
