Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Prepare your ingredients while the oven heats.
- In a large pot, heat neutral oil over medium-high heat. Sear the beef chuck roast for about 4-5 minutes on each side.
- Remove the beef, lower heat to medium, and add butter. Cook sliced yellow onions and minced garlic for about 10-15 minutes until golden.
- Stir in Dijon mustard, Worcestershire sauce, and all-purpose flour. Cook for about 1-2 minutes, stirring constantly.
- Deglaze the pot with dry white grape juice, scraping the browned bits. Allow to simmer before adding beef stock.
- Return the beef to the pot with bay leaves and thyme. Season with salt and pepper.
- Cover and braise in the oven for about 3 hours until the beef is fork-tender.
- About 15 minutes before the beef is ready, slice the demi baguette, brush with olive oil, top with Gruyere, and toast.
- Serve the braised beef with the jammy onions and top with the cheesy crostini.
