Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your ingredients while the oven heats.
  2. In a large pot, heat neutral oil over medium-high heat. Sear the beef chuck roast for about 4-5 minutes on each side.
  3. Remove the beef, lower heat to medium, and add butter. Cook sliced yellow onions and minced garlic for about 10-15 minutes until golden.
  4. Stir in Dijon mustard, Worcestershire sauce, and all-purpose flour. Cook for about 1-2 minutes, stirring constantly.
  5. Deglaze the pot with dry white grape juice, scraping the browned bits. Allow to simmer before adding beef stock.
  6. Return the beef to the pot with bay leaves and thyme. Season with salt and pepper.
  7. Cover and braise in the oven for about 3 hours until the beef is fork-tender.
  8. About 15 minutes before the beef is ready, slice the demi baguette, brush with olive oil, top with Gruyere, and toast.
  9. Serve the braised beef with the jammy onions and top with the cheesy crostini.
