  • 4 Shallots diced or 1 medium onion
  • 1 rib Celery diced, optional
  • 4-5 sprigs Thyme fresh
  • 2 cloves Garlic minced
  • 125 g Bacon Lardons chopped
  • 2 tbsp Brandy or Whiskey optional
  • 2 tbsp Flour
  • 85 ml Chicken Stock low-sodium preferred
  • 400 ml Hard Dry Apple Cider or substitute with non-alcoholic cider
  • 2 Apples peeled and cut into wedges
  • 125 ml Double Cream omit for dairy-free option
  • 1 tbsp Olive Oil for sautéing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Pat the chicken dry and season with salt, then brown in olive oil.
  3. Cook chopped bacon in the same dish until crispy.
  4. Sauté shallots and celery in the drippings.
  5. Deglaze the pan with brandy or whiskey.
  6. Make a sauce by adding flour, chicken stock, and cider.
  7. Combine chicken and bacon with the sauce, then bring to a boil.
  8. Bake covered for 30 minutes, then uncovered for another 30 minutes.
  9. Sauté apple wedges until caramelized.
  10. Stir in cream and sautéed apples, then bake for an additional 20 minutes.
  11. Serve hot and enjoy!
