  • 1/2 teaspoon Black Pepper freshly ground preferred
  • 1/4 cup Parsley chopped, or dried parsley

  • 1 tablespoon Olive Oil or vegetable oil
  • 1 tablespoon Unsalted Butter or margarine for non-dairy option

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium heat. Add the diced yellow onion and red bell pepper. Sauté for 7-9 minutes until softened and golden; cool slightly.
  2. In a mixing bowl, combine flaked canned salmon, sautéed vegetables, 1 cup of Panko bread crumbs, 1 beaten egg, 2 tablespoons of mayonnaise, and 1 teaspoon of Worcestershire sauce. Mix well until combined.
  3. With damp hands, form 1/4 cup of the salmon mixture into patties about 2 inches wide and 1/3 to 1/2 inch thick. Place on parchment paper and refrigerate for 15-30 minutes.
  4. In the same skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add formed patties, cooking for 3-4 minutes on each side until golden brown and crispy.
  5. Transfer cooked salmon patties to a paper towel-lined plate. Serve hot with dipping sauce and salad or coleslaw.
