  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine garlic powder, onion powder, smoked paprika, thyme, sea salt, and black pepper.
  3. Pat the chicken breasts dry with paper towels.
  4. Arrange the chicken in a baking dish and drizzle olive oil over the top.
  5. Sprinkle the spice mixture generously on both sides of the chicken.
  6. If desired, add a splash of lemon juice.
  7. Place the dish in the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Remove the chicken from the oven and let it rest for about 5 minutes before slicing or serving.
