Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded rotisserie chicken, uncooked white rice, chicken broth, and Alfredo sauce.
  3. Add in garlic powder, Italian seasoning, salt, and pepper and stir everything together.
  4. If desired, stir in frozen peas and carrots.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  7. After 45 minutes, remove the foil and sprinkle mozzarella cheese on top.
  8. Return to the oven and bake uncovered for an additional 10-15 minutes.
  9. Allow to cool slightly, then garnish with parsley before serving.
