- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded rotisserie chicken, uncooked white rice, chicken broth, and Alfredo sauce.
- Add in garlic powder, Italian seasoning, salt, and pepper and stir everything together.
- If desired, stir in frozen peas and carrots.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Cover the dish tightly with aluminum foil and bake for 45 minutes.
- After 45 minutes, remove the foil and sprinkle mozzarella cheese on top.
- Return to the oven and bake uncovered for an additional 10-15 minutes.
- Allow to cool slightly, then garnish with parsley before serving.
