Ingredients

For the Cream Cheese Spread
  • 4 oz Cream Cheese Adds richness and a creamy texture; try mascarpone for a unique twist.
  • 4 oz Double Gloucester or Cheddar Cheese Provides a sharp flavor; any sharp cheddar is a suitable substitute.
  • 2 tbsp Heavy Cream Enhances richness; replace with whole milk for lighter option.
  • 1 tsp Coarse Salt Elevates flavor; feel free to use regular salt instead.
For the Garlic Spread
  • 2 tbsp Mayonnaise Acts as base for the spread, adding creaminess; light mayo can offer a healthier alternative.
  • 1 clove Minced Garlic Infuses the spread with flavor; using fresh garlic will give you a bolder taste.
For the Sandwich
  • 4 slices Artisan Bread Offers structure and texture; consider sourdough or multigrain for variation.
  • 2 oz Cheddar Cheese For that classic melty goodness; opt for a mild version if desired.
  • 2 oz Provolone Cheese Adds a mild, slightly tangy flavor that beautifully complements cheddar.

Method

Step‑by‑Step Instructions for Disney’s Grilled Cheese
  1. Begin by blending the cream cheese, either Double Gloucester or cheddar cheese, and heavy cream in a food processor until smooth and creamy, about 1-2 minutes. Add a pinch of coarse salt and pulse briefly.
  2. In a small bowl, combine mayonnaise, minced garlic, and a sprinkle of coarse salt. Mix until smooth and well incorporated.
  3. Spread the garlic mixture on one side of each slice of artisan bread. On the non-garlic side of one slice, layer cheddar cheese, then provolone cheese, and a dollop of cream cheese spread. Top with the second slice of bread, garlic side down.
  4. Heat a skillet over medium heat, add a pat of butter. Place the sandwich in the skillet, pressing down gently. Grill for about 3-4 minutes until golden brown. Flip and grill the other side for another 3-4 minutes until melted.
  5. Remove from the skillet, let cool for a minute, then slice in half to serve warm, possibly with a bowl of tomato soup.

Notes

Grilling on medium heat ensures golden-brown bread while the cheeses melt perfectly. Avoid high heat to prevent burning. Consider using a lid to help melt the cheese evenly.
