Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup dill pickle juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Wooden or metal skewers

Method
 

  1. In a bowl, combine the chicken cubes and dill pickle juice. Marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.
  2. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. In a small bowl, mix together garlic powder, onion powder, black pepper, and paprika.
  4. Remove the chicken from the marinade and pat dry with paper towels. Toss the chicken cubes in the spice mixture until evenly coated.
  5. Thread the chicken onto the skewers, leaving a little space between each piece for even cooking.
  6. Brush the skewers with olive oil. Place them on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving.
