For the Chicken
  • 1 pound Boneless, skinless chicken breasts or thighs
For the Rice
  • 1 cup Rice (jasmine or brown) Adjust cooking time and liquid for brown rice.
For Flavor
  • 2 cups Chicken broth Must fully cover the rice before baking.
  • 1 cup Tzatziki sauce Store-bought or homemade.
  • 2 tablespoons Fresh herbs (dill, parsley) Chopped.
  • 1/2 cup Feta cheese Optional topping.
For Cooking
  • 2 tablespoons Olive oil For greasing the dish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Layer the rice evenly on the bottom of the dish and pour chicken broth over it.
  3. Place the chicken on top of the rice and season with salt, pepper, and herbs.
  4. Spread the tzatziki sauce over the chicken evenly.
  5. Cover the dish with aluminum foil and bake for 35–40 minutes.
  6. Optionally remove the foil during the last 10 minutes to brown the top.
  7. Let it rest for about 5 minutes after baking, then garnish with fresh herbs.
  8. Serve and enjoy the dish, with optional feta cheese on top.
