Ingredients
  

For the Crust
  • 1 cup Dried Figs chopped
  • 1 cup All-Purpose Flour plus more for dusting
  • 1/2 cup Brown Sugar or white sugar
  • 1/2 cup Unsalted Butter cold, cut into cubes
For the Fig Filling
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Optional Sugar to taste
For the Cream Cheese Layer
  • 8 oz Cream Cheese softened
  • 1/2 cup Sugar for sweetening
  • 1 teaspoon Vanilla Extract pure
  • 1 large Egg lightly beaten

Method
 

Crust Preparation
  1. In a large mixing bowl, combine all-purpose flour, brown sugar, and a pinch of salt.
  2. Cut in cold unsalted butter until the mixture resembles coarse crumbs.
  3. Press the crumbly dough into the bottom of a greased 20x30 cm baking pan.
  4. Bake in a preheated oven at 180°C (356°F) for about 10 minutes until lightly golden.
Fig Filling Preparation
  1. While the crust bakes, rinse and chop the dried figs.
  2. In a saucepan, combine chopped figs with enough water to cover them.
  3. Cook over medium heat for about 5 minutes until the figs soften.
  4. Blend the mixture with lemon juice until smooth, then spread over the baked crust.
Cream Cheese Preparation
  1. In a separate bowl, beat the cream cheese until smooth.
  2. Gradually add sugar, vanilla extract, and egg, mixing until well combined.
  3. Pour this cream cheese mixture over the fig layer and spread gently.
Baking
  1. Bake the assembled bars for approximately 30 minutes until edges are set.
  2. The center should remain slightly jiggly.
Cooling and Slicing
  1. Remove the pan from the oven and let it cool completely on a wire rack.
  2. Once cooled, cut the bars into squares or rectangles with a sharp knife.
