Ingredients
  

  • 2 cups fresh broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded carrots
  • 1/2 cup red onion finely chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup cooked bacon crumbled (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large mixing bowl, combine the broccoli, cauliflower, shredded carrots, red onion, sunflower seeds, raisins, and crumbled bacon if using.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
  3. Pour the dressing over the vegetable mixture and toss until everything is well coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the salad a good toss again and adjust seasoning if necessary.
